Step 1 - Whisk the Eggs: In a bowl, whisk together the eggs, milk or water, salt, and pepper until well combined.
Step 2 - Sauté the Spinach: Heat half of the olive oil or butter in a non-stick skillet over medium heat. Add the chopped spinach and sauté until wilted. Remove from the skillet and set aside.
